Part 2 – Cooking Natural Grass Fed Beef Hamburger

Best of all the meat is not that grey color you so often find when you bring the package of ground beef home and open it up to find that only the top layer is red and healthy looking. This is because there are no additives. You can avoid this if you can have the butcher grind your cuts of meat while you wait, therefore a nice red color throughout.

What I like is I can make a nice large burger that is cooked medium rare so the flavor has not been lost through over cooking. Put that on a fresh homemade bun with some tomatoes and onions, from the garden, and a little mayo and mustard or ketchup and you are ready for a taste treat that will make you fall in love with the American burger all over again. Wimpy, would even bowl over Popeye to get to one.

When grilling natural grass fed beef make sure the fire is nice and hot and the grill metal itself is also nice and hot. Do not just turn on the heat and then throw the burger on to cook. This does not help to lock in any flavor. The hot grill and fire sear the meat and lock in the flavorful juices instead of slow cooking where the meat will toughen and lose flavor, no matter how good the cuts of meat that go into the ground beef. The same hold true for pan frying. Using a cast iron pan is the best way to get an even heat. You will find that with natural grass fed beef you may have to add a little oil to the frying pan because the meat is so lean. Most important! Only turn the burger once when you are cooking it, no matter what the method. Turning it more than once causes the flavorful juice to seep out. Even if the meat is well seared it well get tough and tasteless no matter the cut or if the meat is grain fed or grass fed.

Natural Grass-Fed Beef Consumption Prevents Mad-Cow Disease

How much do we really know about the food that we eat? And how often do we take for granted that our legislators and law makers will take upon themselves the responsibility of looking after the people’s health safety in our food system. The day that we stop becoming aware of the reality on how our food is being managed by our so-called leaders is the day that we placed our population in extreme health danger, a catastrophic proportion of endless possibilities of what could go wrong.

Bovine spongiform encephalopathy (BSE) or “Mad Cow Disease” has its origin dating back to mid-1980s but a similar fatal disease called “kuru”, means “to shake”, has been recorded dating back in the early 1950s by an Australian explorer in Papua New Guinea. BSE, kuru, and Creutzfeldt-Jakob disease all belong to a family of diseases known as the transmissible spongiform encephalopathies (TSEs). Forms of TSEs such as Creutzfeldt-Jakob disease (CJD), variant-CJD, Gerstmann-Sträussler-Scheinker syndrome (GSS), fatal familial insomnia (FFI), and Kuru are known to affect humans. And other forms such as scrapie, chronic waste, transmissible mink encephalopathy (mink), and feline spongiform encephalopathy are known to affect deer, elk, sheep and goats.

BSE are known to affect the central nervous system occurring mainly in the brain, trigeminal ganglia, tonsils, spinal cord, and distal ileum of the small intestine of cattle. The progressive degeneration of the nervous system is displayed on some clinical signs such as nervousness, temperament, aggression, abnormal posture, difficulty in rising, decreased milk production, or loss of body weight.

The cause of BSE or “Mad Cow Disease” has been linked to animal bi-products (normally from another cow) being fed to cows which are ruminants, meaning their digestive system is meant to process only grass or related plant form, not animal bi-products. BSE is neither transmissible by contact nor contagious but only by consumption of meat products that are infected by BSE. Is has been determined that the presence of abnormal prion protein in the animal carcasses is a clear indication of BSE or TSE.

One known case in United States was a young woman who supposedly had contracted the Creutzfeldt-Jakob disease (CJD) while living in United Kingdom, where it is more prevalent. But the most recent reported case was in December 23, 2003, after a detection of presumptive positive BSE found in a Holstein dairy cow slaughtered at an establishment in Moses Lake, Washington, which resulted in a recall of more than 10,000 pounds of beef.

Although FSIS has since implemented measures to further safeguards public health, feeding of animal bi-product is still being reported by independent investigators and whistleblowers as a common practice seen in a lot of big beef producing feedlots.

Small family owned ranchers are known to raise and pasture their cattle using natural methods such as grass feeding producing natural grass fed beef. Also, natural pasturing involves raising cows in a free range or open air environment where cows are free to move around as supposed to a confined and crowded areas where cows become prone to all types of diseases.

To ensure health safety on meat consumption, it is recommended to purchase natural grass fed beef products from a reputable small family owned ranch. Part 1 – Cooking Natural Grass Fed Beef Hamburger

I know you are going to say “Oh no a story about hamburger!” Well just take a listen. I have always been a big hamburger eater. Long before Burger King or McDonalds I loved hamburgers. However it was not until I bit into my first Natural Grass Fed Beef Burger that I truly tasted what a hamburger was.

A lot of it has to do with the parts of the cattle that are used for hamburger at the meat processors, but the flavor comes right from the raising of the cattle in a natural, healthy manner. This is true even with grain fed beef. If you can grind the beef yourself it is even better, because you can use sirloin or any other cut even filet mignon (true burger supreme). Using the fatty left overs from the butchering is a modern industrial business practice that now just labels ground beef as 80% less fat, etc., this means nothing as to the quality of the ground beef. If you have a butcher at your market picks your cut of meat and asks if he or she will grind it for you. You will be surprised at the difference it makes.

The grain fed beef tends to be fatty because that is what the USDA grading system is based on (more marbled fat the higher the grading). This of course means more fat dripping off the burger when it cooks and so a reducing in size and a big messy clean up.

The big thing is that since natural grass fed beef is leaner than feedlot and industrialized beef it does not shrivel up into nothing when you cook it. It retains the shape and size you pat out when you make the burger. The juice is not water, which has been added to the ground meat to increase the weight, but the natural juices of the meat itself. A lot of people think that the water or what some times looks like blood is from the meat, but when a cow is processed the blood is drained and the water is reduced even more if the meat processor dry ages the beef. This concentrates the flavor into the meat.

Organic Meat Versus Natural- What the Labels Mean

Characterizing food is like labeling people. Too often, the description is misleading, or doesn’t give you a full picture of what’s inside. Organic meat, natural meat, grass-fed beef, free-range chicken, hormone-free milk?there are a lot of terms floating around out there in the shopping place.

So what should the average consumer do? When it comes to agricultural products such as produce, grains, dairy and meats, most of us don’t have the luxury of getting to know our local farms and farmers. Here are some general tips:

1. Buy your meat, dairy and produce from a known source.

2. Learn how to “read between the lines” of food labels.

3. Prioritize based on concerns such as taste, convenience, health, food safety, the environment, humane animal treatment, and supporting small family farms.

4. Advocate for precise labeling by the USDA and the FDA.

Is Organic Meat Different Than Natural Meat?

The simple answer to the above question is Yes. While some producers of “natural meat” may abide by organic farming practices, there is no strict definition of the label. Organic meat, on the other hand, is required to abide to strict standards established by

the USDA National Organic Program.

Here’s are some basic, useful definitions of Natural, Hormone Free, Organic and Grass Fed:

Natural ? “Natural” sounds good, but the truth is that it doesn’t mean much on a meat label. The FDA does not restrict the use of the term “natural” except for added color, synthetic substances, and flavors. For example: meat labeled natural can be raised on farms that use pesticides on their fields and in their animal feed.

Hormone Free ? This claim can be misleading even when it’s technically true. All poultry is free of hormones. Hormones haven’t been granted in poultry or pork in the U.S. since 1959.

Organic ? When you see the USDA “organic” label, you know the food inside has passed stringent guidelines. Here’s a summary of what it means when meat passes the organic test:

- Organic farmers do not use antibiotics or synthetic growth hormones.

- Organic meat comes from animals that are given 100 percent organic feed.

- Organic animals are given access to the outdoors and/or pastures.

- Organic farms do no use most conventional pesticides, synthetic fertilizers, bioengineering, or ionizing radiation.

- Organic farmers emphasize the use of renewable resources and the conservation of soil and water to enhance environmental quality for future generations.

- Organic farms are inspected by a Government-approved certifier to make sure the farmer is following all the rules necessary to meet USDA organic standards. Companies that handle or process organic meats must be certified, too.

Grass Fed ? As of November 2007, the U.S. Department of Agriculture began regulating a voluntary “U.S. Grass Fed” label for beef and lamb. The regulations require that the animal has access to pasture and isn’t fed grain. Grass-fed beef is lower in saturated fat and cholesterol than conventional beef, with more vitamins and “good fats” like Omega-3s and CLAs.
